Does God Know What Sins We'll Commit Before We Commit Them?

Exactly. Think how Jesus wept over the city of Jerusalem when he approached the city..

"'Jerusalem, Jerusalem, you that kill the prophets and stone those who are sent to you! How often have I longed to gather your children together, as a hen gathers her chicks under her wings, and you refused!" Matt 23:37

Even though God knows everything, He still grieves over how we use our free will to kill our souls, just as any parent would grieve over the death of their child.

And Judas still could have achieved salvation if he had asked for forgiveness. Whether or not God knows which sins we will commit before we actually commit them is, in one sense, irrelevant; we always have access to God's forgiveness after the fact.

I do not think the future exists as a determined script (ala book) but rather it is open. God perfectly knows all the possibilities and he knows us perfectly, but it is still our free will that determines our actions. This is not a limiting of God, but a different understanding of time.
