Their flavor is best brought out around 60 degrees or so, which is not really room temperature most times of the year. If I remember I try to put certain wines like Beaujolais in the fridge for 15 min or so before I serve them. It's also fun to taste the flavor changing as it warms up from 60 to room temperature. As to number two, I think my friend learned it from Spain. He referred to it with a Spanish name... I forget now.
