I had a *egad* cold CHIANTI once. I didn't know it was coming out cold. It was like drinking turpentine, only with no real flavor. :shock:

Many red wines are better served slightly chilled, but certainly not cold. Their flavor is best brought out around 60 degrees or so, which is not really room temperature most times of the year. If I remember I try to put certain wines like Beaujolais in the fridge for 15 min or so before I serve them. It's also fun to taste the flavor changing as it warms up from 60 to room temperature.

Alright. As to number two, I think my friend learned it from Spain. He referred to it with a Spanish name... I forget now. :idontknow:
