Even if it is a dignified handshake, we are still taking our focus off Christ. My idea would be to have it at the beginning, something like this: Priest: In the name of the Father, and of the Son, and of the Holy Spirit. All: Amen. Priest: The Lord be with you. All: And also with you. Priest: Let us now turn to one another and offer the sign of peace etc. (Havne't decided on the wording) Then the Penitential rite. Or maybe you could have it like this: My brothers and sisters, to prepare ourselves to celebrate the sacred mysteries, let us call to mind our sins. (Period of silent reflection). Then have the priest say something about forgiveness of sins etc. and then have the sin of peace. Hmmm, I need to think about this more. Then, from the very beginning of Mass, we are all looking together, in peace with one another, to Christ. The priest says "May the peace of the Lord be with you always" and we respond "and with your spirit" (because the Chinese translation > English translation). The priest says "Let everyone offer each other peace". Then we first solemnly bow to the priest and to our Lord while saying "Ping'an (peace)". Then we bow towards one another, saying "ping'an".
