The early Christian practice was to fast on Fridays because it is the day of Christ's Passion and death. It is not an act of sorrow, but of prayer and thanksgiving. It is giving thanks to God for all that He has given us and done for us, above all in sending His Son to die and rise again for us.

Meat is associated with feasting. At a time when many people could not afford meat, they would have it on Sundays as a sign of rejoicing in the Resurrection. So it seemed natural to avoid meat on Friday, a penitential day.

But more than that, I think we abstain from meat because Christ is our "true meat"---His flesh was sacrificed for love of us. We refrain from meat on Fridays to remind ourselves that Christ alone is our salvation.
