I would assume this was because they were providing Catholic photography for both the right and left lungs (as JPII put it). Can. 926 According to the ancient tradition of the Latin Church, the priest is to use unleavened bread in the eucharistic celebration whenever he offers it. Also, yes, it is "common" to hand the chalice to the communicant to take a sip. Whether it is [i]correct[/i], however, is another question. Welcome to the Canadian Church!
