Hey, the LOTR Trilogy aaaaannnnnddddd The Silmarillion, which gives the history of creation and the elves. OK I get the GEEK award for this thread, but this fabulous book by Tolkien only enhances reading the LOTR trilogy...

Also, Mere Christianity by CS Lewis is pretty profound

If she's read Story of a Soul then get her Maurice & Therese: The Story of a Love. It's the letters between St. Therese and Maurice, the young priest she accepted as her brother. IT ROCKS!!!! And it's an easy read! More importantly you can get a used copy for less than $5 on Amazon and Half.com!

Reading The Four Loves by C.S. Lewis with my book club. ;) It's really good so far.

LOTR and Silmarillion -- very inspirational.

As well as Story of a Soul.

Oh Vera! Then you'll LOVE Story of a Love. It talks a lot about mercy etc, and Bishop Ahern (the author) does a great job of locating the letters in Therese's life story so even if it's been a while since you've read Story of a Soul you'll still be able to place them in her life....
