though this is not a picture of Carthusians (Monastic Sisters of Bethlehem and the Assumption) they wear the Carthusian styled habit, and thus serve well for modeling purposes.

the band of cloth you speak of, has an actual name, that i don't remember, but will find out in my books. its purpose its practical for keeping the hooded scapular(its actually a 'cowl' because it has sleeves)somewhat together, from flying up and out.
so its actually an 'opensided cowl.'

EJames is correct - the purpose of the straps is to keep the scapular on the Carthusian habit from blowing up and covering the monks faces which could be dangerous. Because they live in such remote places the weather conditions can be very extreme. I heard that the habit is fashioned after the garments of peasant shepherds who lived in the region of the Grande Chartruese at the time of their founding (11th century, right?).

Yeah, 1084. That's what I figured the bands were for: just for a practical reason, to keep the front and back sides of the scapular/cowl from blowing to the side or into one's face from the wind. That's interesting, it was fashioned after the peasant shepherds who lived in the region of the Grande Chartruese. I bet there's more written about this somewhere, probably in French at least. I'm not sure about a particular title for them, as there isn't one on the Carthusian site in this description of the nun's habits.
