Everything was spelled out in some 27 or so chapters. God was pretty particular about how He wanted his people to worship Him. So, why is it that there is no such "levitical" book for the NT? Has God changed? Does He no longer care about how we worship? Is it "anything goes"?

I personally believe that Jesus wanted to bring about a new order of things, in which people would be more concerned with a living faith and the concrete love of God and neighbor than with ritual laws and ordinances. However, He did institute a few basic rites, like the sacraments, and outlined the general form by which they were to be observed, which is found in the N.T. I'd say, in general, God is not indifferent to how we observe these rites, but He is more concerned about the interior aspects of faith, humility, and sincerity, but He leaves the exterior aspects, like the specific rubrics, to the discretion of the church, so that the disciples had more freedom to develop a new order reflecting Christian truth. So there can now be a variety of rites, but we should also abide by the church's rules, since, as St. Paul often reminds us, we ought to worship God in a decent and orderly way.
