Thats what they are in scientific journals and papers. : I have a friend from Louisiana who insists that they're "crawfish". No no no! Even though cajun cuisine often uses crayfish, they've been calling it incorrectly for the past many many years. I don't care to eat crayfish that much, they're so messy and gutsy. haha, I don't have a problem with peeling and eating whole shrimp though, since they don't have juicy guts.
