Crawdad .... I've never personally prepared them, but I've had them at a Cajun restaurant here. Chili-coagulated milk etouffe w/crayfish. :drool:

ew... The last time I saw one of those was in high school biology class.... It was NOT pretty. I think we called them crayfish...

It's crawfish! Anything else is heresy...

There are many appetizing ways to prepare crawfish dishes...
If you boil them, you don't boil them just like lobster... that's way too bland. You've got to throw in generous amounts of something like this:

You can add corn, potatoes, celery, etc...
It'll come out looking like 'dis:

Or you could make a crawfish etoufee, crawfish gumbo, crawfish po-boy, etc. You can use them pretty much anywhere you can use shrimp.

They do taste sort of like shrimp, only a little chewier.

I like shrimp better, but these aren't bad.

Crawdad..... it's one of this region's linguistic distinctions. I had some in IN this summer, they're all right.... kind of messy and nasty in the ast of eating them, but they don't taste too bad....
