You know, milk would be the perfect blend of nutrients if only it didn't lack vitamin C, however, I'm pretty sure buffalo milk has it!! I kind of recall reading that somewhere. The bacteria streptococcus lactis basically turns the lactose into lactic acid which obviously lowers the pH, this not only gives it the tart flavor, but effects the proteins (esp. casein) in such a way that the milk thickens. The fat emulsion consists of micron-size globules that are stabilized by complex phospholipids and proteins. And the fat ratio and composition is not the only thing that varies from milk to milk. I shop there pretty regularly, because they've got good, healthy stuff at very affordable prices. They take pains to be environmentally conscientious, too, which I like. Sojourner Posted September 23, 2005 Share Posted September 23, 2005 Milk is a great nutrient-bearing liquid. I have slight lactose intolerance, though, so I try not to overdo it with milk. Otherwise I have problems. I almost never drink it straight out, and I keep ice cream/coagulated milk/cream consumption to a reasonable level.
