The word Eucharist is found in 106 Letters, Dialogues, Homilies, Chapters and Books.
The word Eucharist appears in the following 5 out of 106 Letters.

---------------------------------

LETTERS OF ST. AUGUSTIN: LETTERS XLV TO LV (INCLUDING REPLIES TO QUESTIONS OF JANUARIUS)LETTER
XLV.
A short letter to Paulinus and Therasia repeating the request made in Letter XLII., and again complaining of the long silence of his friend.

--------

LETTER XLVI. (A.D. 398.)
A letter propounding several cases of conscience.

CHAP. III. -- 4. Some one may say, "The Eucharist ought not to be taken every day."

CHAP. V. -- 6.

"When ye come together into one place, this is not to eat the Lord's Supper," giving to the receiving of the Eucharist to that extent (i.e. the eating of the bread) the name of the Lord's Supper.

---------------------------------

THE LETTERS OF ST. JEROME: LETTERS LXII TO LXXIV, LETTER LXXI. TO LUCINIUS..

6. You ask me whether you ought to fast on the Sabbath(2) and to receive the eucharist daily according to the custom--as currently reported--of the churches of Rome and Spain.

---------------------------------

LEO THE GREAT, LETTERS XXXVII TO XCIV

LETTER LIX.

TO THE CLERGY AND PEOPLE OF THE CITY OF CONSTANTINOPLE.

Leo the bishop to the clergy, dignitaries, and people, residing at Constantinople.

II. They are to be rejected who deny the truth of Christ's flesh, a truth repeated by every recipient at the Holy Eucharist.

---------------------------------

THE LETTERS OF ST. JEROME: LETTERS LXXV TO LXXXIII, LETTER LXXXII. TO THEOPHILUS BISHOP OF ALEXANDRIA.

(5) If then we l may not offer gifts that are our own unless, we are at peace with our brothers; how much less can we receive the body of Christ if we cherish enmity in our hearts? How can I conscientiously approach Christ's eucharist and answer the Amen(1) if I doubt the charity of him who ministers it?

My favorite quote:
Theodore of Mopsuestia (also called "of Antioch"):
When [Christ] gave the bread he did not say, "This is the symbol of my body" but, "This is my body." In the same way when he gave the cup of his blood he did not say. "This is the symbol of my blood," but, "This is my blood," for he wanted us to look upon the [Eucharistic elements] after their reception of grace and the coming of the Holy Spirit not according to their nature, but receive them as they are, the body and blood of our Lord. We ought . . . not regard [the elements] merely as bread and cup) but as the body and blood of the Lord, into which they were transformed by the descent of the Holy Spirit (Catechetical Homilies 5:1 [A.D. 405]).
