Also, I realized that this question is really a wider one...I know several people who cannot eat wheat, and from what I understand, the wafer is only supposed to be made of wheat and water. It would depend on the severity of the allergy, what he was specifically allergic to, etc. As for a person in the pew who is allergic, they would receive from the species of wine.
