White veils do refer to the novitiate, postulants and novices. Black veils, those in final profession. In some communities the white veil joining the professed the last year before her final vows can be referred to as a grey veil. I never heard of this type of schedule before. I know when you first enter the monastery Mother has you go to bed before Matins and you sleep in. This goes on for however long she chooses. However, all white veils in bed before nine wasn't the case in either community. Getting up an hour earlier than the others, my goodness! :) Does not sound nice lol.

No, in this case, white veils referred to the converse/lay sisters. These were sisters who were primarily tasked with the needs of the convent: food, cleaning, etc.
