sr.christinaosf Posted May 23, 2015 Share Posted May 23, 2015 Yesterday, we had the first "Rhubarb Party" of the season here at St. Anne's Guest Home. We get the North Dakota state weed donated to us every year; this year it started a little earlier than last. I gather residents together and we chop up rhubarb for use throughout the year. Actually, I made up a couple kettles of sauce yesterday with some of what we cut up; the rest I gave to the kitchen to freeze. I always like to pray to St. Martha and our Blessed Mother when I undertake a cooking or baking endeavor. There's such a feeling of satisfaction and maybe even gratitude when we finish a rhubarb, pumpkin, or apple marathon. However, the song "We've only just begun" came to mind while we were cutting because I know this is just the beginning of a season of processing local produce that comes in. I think maybe I should write a little article about this on Our Franciscan Fiat, my blog for our Religious Community of Franciscan Sisters of Dillingen. NadaTeTurbe Posted May 23, 2015 Share Posted May 23, 2015 With rhubarb you can make compote ! very quickly ! Compote express : Put the rhubarb into pieces in a bowl. Cover with sugar and cover the bowl with cling film. Cook in the microwave for 5 minutes at 800w. you can do the same with strawberry, you just need less sugar and to cook only 3 minutes. I know the leaves are poisonous - actually there's a poisonous weed (burdock??) that looks similar to rhubarb. some started growing by our place a year or two ago. I actually have some sour milk in the freezer that I'm tempted to thaw and throw in in place of the water - I think it would make it rich and even better tasting.
