I love this thread! A lot of my meatless recipes are in cookbooks, but I know of a few good ones online.

Eggplant Parmesan Casserole:

It's baked, not fried, so it's healthier!

Greens and Potatoes (basically a mashed potato and escarole casserole):  http://www.ciaoitalia.com/seasons/recipes/greens-and-potatoes

My favorite Indian dish would have to be Paneer Tikka Masala (Vegitarian) and Mattar Paneer (Also vegitarian).

I havent made either of these dishes myself yet because the paneer is a specific kind of cheese cube that I havent really researched enough to know how to make. I usually make chicken tikka masala.

Also, you must eat Indian food with a huge portion of naan! Yummmmmmmm! Now Im hungry!

I love Indian food. My favorite dish is probably biryani. I once had an Indian neighbor's homemade biryani, and it was mouth-wateringly delicious!

Naan is also one of my favorite breads. :) I once made homemade naan on a skillet, and it was fairly successful. I don't remember where I got the recipe, though I recall that I had to press on the naan with a damp cloth as it was cooking!

I think we should all collectively embark on a journey to make naan for lent. Lots and lots of naan!

When I eat tofu it becomes a sacrifice for everyone around me. So I'm going to avoid those recipes. Other than that, I'm loving this!

One of my favorite meatless meals is black bean tacos/burritos. I cook up some onions then add in a can of black beans, a packet of taco seasoning, and some canned green chilies (if you are using this as a way to clear out your sinuses from a cold go for the hot ones). Mix it up and heat through. Use as you woulc taco meat.

Also yummy in breakfast burritos the next day with scambled eggs.
