marigold Posted June 28, 2014 Share Posted June 28, 2014 Portobello mushroom burgers. Get some portobello mushrooms and cook them in a pan or on a grill. I will usually put spike or brags on them while they cook. Then put on garlic havarti cheese and then get some good sesame seed buns. In the buns I will put guacamole, lettuce, tomatoes, caramelized onions, and then some Dijon mustard. Put it all together and enjoy your burger. We usually do it with tofu fried in peanut butter and crushed red pepper flakes, so it kind of has a similar consistency to chicken. I have so got to try this! :love: I use extra firm tofu, cut into little slabs & lightly coat it in black or white pepper. I then brown them in a little peanut oil. I make a quick teriyaki glaze using soy sauce, brown sugar & mirin using a 1:1:1 ratio. You can heat it up in the microwave to melt the sugar crystals...If you don't have mirin, you can skip it, although I prefer it. :) I serve it with shiitake mushrooms & spinach over a bed of rice or quinoa that I've sprayed toasted sesame oil on & topped with toasted sesame seeds. The Bishop in my old diocese wrote an article about how not eating meat on Fridays but eating food at the Red Lobster completely negates the penance of the abstinence. I personally am not at that spiritual level to go imposing stricter penances on myself. Also I'm not a huge fan of seafood so going to a Red Lobster would be a form of penance for me, especially when I could go to a Red Robin instead. One day, with God's grace, I will be able to offer water and bread fasts, and maybe even use tap water for extra penitential effect. I'm a vegan myself and many of the dishes people have suggested are things that I would make for myself as a regular meal (minus any cheese). For Fridays I try to keep it extra simple - soup or broth with bread, or maybe beans on toast. I know that everything I eat is technically in line with what we are able to have on Fridays, but having a vegan pizza or one of my favourite curry meals on a Friday would feel like sticking to the letter while forgetting the spirit...
