Meat-free Friday Meal Ideas?

I don't usually post in this section so sorry if this question has been asked but I really need some meal ideas for Fridays.
I'm only in my first year of Catholicism so new to this! And it's Friday where I am in the world and I'm hungry.

What are some of your favourite Friday meals? I need ideas.

Fish and Chips.

Mac n' cheese.

 

I am making a Spanish Tortilla - a fried potato omelette. I add in chopped red and yellow peppers, garlic and peas. Serve with a crispy salad and crusty bread. If you want extra protein top with grated cheddar.

A robust soup, I add cream cheese. My current fav is lettuce, pea and rice. You can put chopped boiled eggs on the top too.

Well today is the Feast of the Sacred Heart - so you can guiltlessly eat meat today :) 

Peanut butter is usually my friend for fridays. I tend to eat a lot of 'breakfast' on fridays - french toast or pancakes; also meatless perogies. Spaghetti and tomato sauce.

Vegetable soup and bread is my staple, although I change the soups, usually rotating between lentil, sweet potato, and minestrone.

Katy and I were given two vegetarian cookbooks as a Christmas present. Some of the recipes are absolutely wonderful. Plus meat is expensive, and I am poor, so mostly we stick with vegetarian stuff. :P

Here is a recipe very close to one of my favourites in that book:

I love everything with black beans!

 

They are a good replacement for meat in a lot of dishes.

That looks similar to what we have been doing. We usually do it with tofu fried in peanut butter and crushed red pepper flakes, so it kind of has a similar consistency to chicken.

I should try it with tofu. There are certain things I have less experience with cooking and that would include fish, red meats, and tofu.

I like the consistency of firm tofu, but it really has no flavour unless you do something with it first. Our recipe has you basically just throw it into your peanut sauce and be done with it, but IMO that left it pretty flavourless, hence my frying in peanut butter. I have a feeling I can eventually come up with better ways to flavour it though.

It does not taste bad or anything, but it is not a particularly exciting ingredient when it does not have any added flavour. Although some people do not like the texture, and that comes down to preference.

Cheese pizza cannot be beat. Also, soup. You're allowed by Canon law to eat meat-flavored soup, so long as there is no actual meat in it.
