Making a Mary figure out of food could confuse the role of Christ and the Theotokos; they will think that Mary herself is also God, giving herself to us as real food in a miracle of some form (possibly Consubstantiation). Moreover, the Consubstantiated Mary looks truly like her, whereas the Transubstantiated Christ appears to be but bread; therefore the confusion will be even more difficult to remove.
