I like them any day of the week all year 'round... :) I have some staunch Catholic friends who'll be visiting me this Friday. I would like to eat well but it has to be meatless out of respect for them. Normally it wouldn't matter but they're important to me. Fish and dairy is supposed to be okay but red meat is out. Anyone got any favorite lenten meals? Something that actually tastes good? I'd like to surprise them as they're good friends, and good people with a meal they can enjoy when they stop in. maximillion Posted March 19, 2014 Share Posted March 19, 2014 Fish Pie. Make a white sauce, you can vary it and add herbs to choice, onions, whatever. You will need about a pint. (I never measure anything, I do it by eye - sorry). Add 750 grms firm fleshed fish, three varieties is nice. It should be skinned and filleted. Cut into one inch sized chunks. Add to the sauce and keep on heat untill just cooked through and still in chunks.. Take off the heat and pour into a casserole dish. Leave to get cold. Meanwhile boil some potatoes, you need about two to two and a half pounds raw. When cooked mash up the way you like them, with butter or whatever, and add seasoning. Spread on top of the cold fish in the casserole and top with tasty cheese like parmesan or cheddar. Put in oven on medium and bake for about 40 min before your guests arrive. BUT I made some fantastic cheese enchiladas today!!!! Made my husband VERY happy!!!!!
