This was really interesting. I'm ignorant of Eastern liturgy, but I always thought the 3 pronged candles were kind of nice. I assumed they represented the trinity, but the bishop is holding a two pronged candle here. What's the significance of that?

The candles that bishops (and patriarchs) use to bless the congregation are called the dikirion and trikirion, and the former signifies the two natures of Christ in the Incarnation, while the latter signifies the three persons of the Holy Trinity.
