Waterproof, Fireproof, Building Materials For An Outdoor Porch Cover?

I decided to use fiber cement siding on my house because it would protect the house from fire.  Then I realized how great the stuff was.  You can get it with a baked on paint finish that will last near forever without needing to be repainted.  The stuff doesn't rot and termites won't touch it.  I am even putting the fiber cement board in the soffit above the siding because that can be a source of fire.

 

So anyway I want to replace the old trellis behind my kitchen with a Caribbean style covered porch.  I am going to replace the rotted deck with pavers and I figure that they won't require a single bit of maintenance.  But what do I build the porch cover with so that it will be both fireproof and rot proof?  I've done a little research and I found something called "Alumawood", but I don't know much about it.  And I think that a metal roof would be the way to go too, because it is not heavy like tile and I figure it wouldn't need much if any maintenance.  Maybe I could just wash the covered patio down with a hose?

 

I built a fancy vinyl roman trellis years ago at a fancy house in Utah, but I have my reservations about vinyl.  Vinyl siding was very popular in Utah and I saw a number of cases where it had been melted by a barbecue close to the house.  And I want to put in an outdoor kitchen on the far edge of the covered patio -- with a barbecue and even an outdoor fireplace.  I can imagine the vinyl melting...

 

So any good ideas?  Does anybody know anything about "Alumawood"?

The more I look into it I think that "Alumawood" is the way to go.  I will probably build it out of that.
