And yes, it's something you can develop my exposing your body to high levels without acclimation. Or by repeated exposure. Working in a bakery for 2 years, I started being just fine around things with cinnamon in them. But as I got continually exposed to it, it eventually got so when they made cinnamon rolls I couldn't breathe anymore.
