AnneLine
Well... thought & prayed about it, and I am not ready to let this thread go onto hospice quite yet... think it might have a bit more life in it. What are any of you thinking of fixing for 4th of July? I have some chicken around here, and a few potatoes I can turn into potato salad. A few apples I could cobble into a cobbler. Not a whole lot else.... However, Mr.AnneLine is notorious for hauling in food when we get to this point... so who knows what will be here around midnight. I'm betting he brings either cheap steaks or ribs. Anyone want to give me some odds? ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ On a more serious note -- and serious for a lot of people -- my former employer, City College of San Francisco, lost its accreditation today. There's lots of complex reasons (and don't believe everything you read in the news, trust me...) but we had a lot of people who preferred to take pot shots at each other rather than deal with the problems.... and now this is the result. CCSF is an odd place.... not just a '2 year degree college with first 2 years of 4 year college' kind of place -- which is why I don't think the accreditation people really understood how or why the budget was allocated and spent the way it was. We do and did that... but so much more. It is the best place to get free or low-cost retraining if you lose your job.... career assessment and job placement assistance... certificates that will give you a viable well-paid career in 1 year or so -- for thinks like radiology technician. A super-in-demand career... can't get enough people trained for it... but it is not a 2 year degree, so it just doesn't show up in the stats. Probably an additional 70 or 100 similar career paths.... free English classes for those new to USA.... a ton of computer and internet literacy... Programs for people in jail and coming out of jail... For adults who never learned to read... For seniors who need things to keep mind and body healthy.... you get the idea. It breaks my heart, even though was pretty sure it would go this way. Most of my friends (even those who worked at other colleges) refused to think this would happen, because, uh.... it is one of the largest employers in the City & County of SF with 7 campuses. So say a prayer for my former co-workers and all those students...... Yes, the decision will be appealed.. but my bet is come 1 year from now, no more CCSF.... Did I ever mention that, when I worked for them, I put about 300 people to work each quarter? And that my job was eliminated as one of those budget cuts to try to keep this from happening? So, yes, I really do have a vested interest in this..... http://www.sfgate.com/news/article/CCSF-will-lose-accreditation-in-2014-4645783.php ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ On the food front..... Tried something fun with a left-over tortilla the other day. Was fixing some of those ARFink tacos (I am an addict now...) and the oil used to fry the tortillas was still there. I looked at it.... turned on the burner.... cooked a tortilla until golden brown & puffy..... an then pulled it out and dusted it with about a 1/4 tsp of sugar and some cinnamon. And let it cool in a soup bowl. Ended up with the BEST sundae bowl imaginable...... and brilliant minds, someone else came up with the same idea (although no cherries on mine, please...) http://dishingwithleslie.blogspot.com/2012/07/crispy-tortilla-bowlsfor-dinner-or.html Now THAT is something we might just have tomorrow... arfink
Well, I didn't have the famous arfink chicken tacos tonight, but I did make enchiladas. Which were very tasty. :)

AnneLine
Welll.... the verdict is in! Steak by a nose (excuse the expression). Mr AL called me last evening to tell me he was on the way home from visiting his mom, and did we need anything at the store. Bread? Yes. Anything else? Well.... tomorrow is 4th of July... do you want anything special before you go to work? (He works at the SFO for a major rental car agency, so no day off for Mr AL!) What do we have? Chicken. Oh. He brought home steaks.... and some Kielbasa!!!! We had steaks, pot stickers and zucchini. I guess we're going for an Ethnic 4th!!!! Now I gotta go get his bag-dinner ready for him to take to work..... Have a wonderful 4th, everyone!!!!!
TheresaThoma
We are having NY strip steaks (my fav) with baked sweet potatoes and a festive cocktail (http://bbalacarte.com/2012/06/30/the-sparkler/).
AnneLine
Theresa T -- that looks AWESOME. I'll probably have something, but probably not quite that creative. Maybe some frozen grapes in diet sprite... with a splash of rum. Or a beer. I have some sweet potatoes here, but we had 'em yesterday. :) Think I may grill up those kielbasa with the last of the new potatoes for myself tonight.... But I gotta get some stuff done first... What's everyone else doing? Food and other-wise?
TheresaThoma
The cocktail was actually very simple. I believe they took the picture of one without the grenadine. Despite my best efforts the grenadine mixed with the soda. It tasted yummy though and my mom and I had fun with the leftover PopRocks.

If your grenadine isn't sitting on the bottom of the glass, you're pouring the other ingredients over it too hard.

Dr. Bombay
Pop Rocks mixed with alcohol seems like a most volatile and extremely dangerous combination. That Life cereal kid died back in the 70s when his stomach exploded from eating Pop Rocks and Coca Cola. Using vodka would seem to be an even more foolhardy choice. This is actually completely untrue (though PopRocks were pulled from the shelves for a while due to this myth). Your body natural ways of relieving excess pressure in the stomach.
