Anomaly Posted January 3, 2013 Share Posted January 3, 2013 ANYTHING can go in a soup with a chicken broth base. My dad would make Junk Soup at least once a month. The key was letting it simmer for at least a few hours. We NEVER threw away food. A close second was a thick stew made with beef broth and leftovers served over rice or mashed potatoes. Finally, meatloaf can have just about anything added to it. Junk Soup was by far the most favorite. You did not come over to the house without having to have at least a cup of soup. Nobody refused food from my dad or got sick that we know of... I still remember the first time my wife ate soup with chicken neck and gizzards. Just made it this week on Tuesday and it is already half gone. My other favorite is my mom's baked chicken with olive oil, salt, and pepper. It's a comfort food and I love it. LinaSt.Cecilia2772 Posted January 4, 2013 Share Posted January 4, 2013 Favorite Tomato Vegetable Soup Diced Onions Diced Celery Diced Carrots Minced Garlic Crushed Red Pepper Flakes (If Desired) 1 Jar of favorite Pasta Sauce (I use either Prego Traditional Sauce or a Specialty Four Cheese sauce) 1 Carton of Chicken or Vegetable Stock or Broth Small Pasta (I use small shells or tiny salad macaroni tubes) Salt and Pepper to Taste Olive Oil In a pot, Saute the onions in the olive oil until translucent. Add the celery, carrots, and garlic with a small pinch of salt and pepper. (Substitute however much red pepper flake for black pepper if you want to add a little heat.) Once the vegetables are tender, add the jar of pasta sauce and carton of broth or stock and season with a little bit more of salt and pepper. This recipe is very flexible, so if it looks thick, add more stock. If it looks thin, add more sauce. Proportion the vegetables and pasta to accommodate. Once the soup has come to a boil, add the pasta and cook until the pasta is done. Ladle into bowls and serve. Preheat oven to 350 C Brown about a pound of extra lean (or lean) ground beef. Then cut up about a cup and a half (2 cups if you have a bigger casserole dish) worth of raw cabbage. Add ground beef and cabbage to a medium sized casserole dish Add about a half cup of rice (not instant) and maybe a quarter cup of water Finally add about a cup (cup and a half at most) of tomato sauce of preference, but not too much that it is too liquidy when added to the rest of the ingredients Add salt and pepper to taste Mix ingredients, cover and place in oven for an hour Mix again about half way through to insure that all of the rice is cooked. Enjoy! Bring to boil and simmer until milk is thicker. During or after cooking, add a bit of cinnamon and a lot of sugar. More cinnamon may mean less sugar, to a point. You may need to add a dollop of milk as the milk goes down. Optional: Add 1/8 to 1/4 teaspoon of almond or vanilla extract. Add raisens to taste. (They are a bit better than craisens.) Add a bit of vanilla coconut milk or a bit of almond milk. Allow to cool. Serve warm or cold. Use enough milk and you have: high protein, carb, cinnamon that helps balance blood sugar, and a morning boost of blood sugar, calcium, and other good stuff. Cons: Sugar. Some fat. Apotheoun Posted October 8, 2013 Share Posted October 8, 2013 (edited) Monterey French Bread 1 loaf of sour dough french bread (cut in half lengthwise) 1 cup of mayonnaise 3/4 cup of grated Parmesan cheese 1/2 cup of chopped onion 1 tablespoon of Worcestershire sauce* Put the mixture on the two halves of the bread, and then broil the bread (I usually set the oven to 500 degrees) until the mixture gets a golden brown color (I usually let little black spots form, because that means the mixture has caramelized a bit, but do not let the bread burn). The broiling process should take no more than 3 to 5 minutes. *If you want a less zesty flavor to the mixture use less Worchestershire sauce.
