Phatmass Cookbook

I was just trying to come up with creative ways to use my fridge leftovers before I lock up my apartment and go home for a month, and that got me thinking...Wouldn't it be kinda cool to have a phatmass cookbook?  Assuming that there are enough people around here that CAN cook... :hehe2:

 

So what's your favorite thing to cook?  Or favorite recipe?

Most of what I do is just throw things together into a scramble. Here's a recipe of a sort:

 

In a frying pan with olive oil, saute onions. Add carrots and celery if desired. Proportions are very flexible, just put them in somehow. However, always put in onions, then celery, then carrots, just so that everything gets cooked. Add potatoes around this time (maybe after carrots) if desired.

Once that's cooked to your satisfaction, add whatever else you want. This could be meat or anything else that you have in the fridge. If you didn't put in potatoes, I recommend that you find some starch.

Add cheese, let it melt, and then add some eggs that have been beaten. (I recommend that you use a pinch of salt when you beat the eggs, it helps the yolks break up better.) Let the eggs cook to your satisfaction (and stir them into the rest of the food), and serve.

 

I eat this for any meal of the day. At some reasonable time, I add spices (salt, parsley, and garlic are what I use, but you could use anything). Also, I generally put in about two eggs per person/serving.

 

(Nota Bene: "You" is used for a generic person here....)

 

Edit: My favorite food would be a toss-up.... But, with only a dorm kitchen, this is what I do most of the time.

Favorite recipe?  Pasta cooked al dente with one of the two "sauces"

 

Extra Virgin Olive Oil (better flavor) garlic, basil and a touch of Parmesano Reggiano

OR

Butter (real butter), garlic, half and half cream, and Parmesano Reggiano = Alfredo Sauce

 

For a heartier meal, toss in cooked chicken, fish or shrimp.

 

Oh yes, salt and pepper to taste.

Corn Chowder (very simple, and one of my fav soups)

4-5 slice of salt pork
1 medium onion
8 med- large potatoes (russets work best)
Water..enough to cover potatoes
1 can sweet corn
Milk 2-3 cups
Butter 2-3 T
Salt
Pepper

Start by dicing onion and cooking at a med temperature with salt pork in a large stock pot. Once fat is rendered and onions cooked; add pealed cubed potatoes about 1/2 inch chunks. Add water until potatoes just covered salt and pepper slightly. Allow to boil until potatoes are toughly cooked and starting to break apart thickening the water. Allow to cook down slightly add butter once butter is melted add enough milk until chowder has desired consistency. Add a can of sweet corn. Salt and pepper to taste, let simmer for 30-45 min.

I might have put this recipe in the thread Icey listed. But here it is anyway. This is my wife's recipe. I am not sure where she got it, but my bet is kitchen stewardship.  

 

WHITE CHILI

 

 

1 lb of chopped/cubed chicken meat

1 med-large onion, diced

2 cloves garlic, crushed

Butter or oil for sautéing chicken if raw

1 can or 2 C chicken broth/stock

2-3 cans white beans (northern or white kidney)

1 fresh jalapeno chopped or about 1 T jarred jalapeno

2 cans green chilies

1 can corn (optional, if you like that sort of thing)

1 t salt

½ t pepper

1 t cumin

1 t oregano

¼ t cayenne pepper (only if you like it really spicy, I never add this in and it is spicy enough for us)

1 C sour cream

½ C heavy cream or half n half 

 

Saute chicken, garlic and onion in oil. 

Add beans, broth, chilies, jalapeno, optional corn and seasoning.

Bring to a boil and simmer 30 min.

Remove from heat and stir in sour cream and cream/half-n-half.

 

If your chicken is already cooked (I keep chopped, cooked chicken in the freezer left over from roasted chicken), just throw everything in the pot, bring to a boil then simmer. 

You can also omit the cream/half-n-half to keep it thicker. Then add to your desire per each portion(i.e. in the bowl).

 

I also double this recipe and freeze the extra for future meals prior to adding the sour cream and cream.  I add that back in after I’ve reheated it.

How about a frittata?  You can pretty much throw anything into a frittata, diced potatoes, left over meat, tomatoes going bad, lots of herbs.

If you use a whole head of cauliflower, that should be enough for one sheet pan (jelly roll cookie sheet.) however, just one whole pizza of this size was really not enough for all of us(me, wife and 2 young boys), so next time we will use 2 heads of cauliflower and make two cookie sheets worth. My wife prefers slightly less oregano. She made the crust with a Mexican cheese blend and used mozzarella on the pizza. But you can do whatever!

I have hundreds of favorite recipes. Probably my most favorite ever is simply roasted cauliflower (in olive oil, so it gets nice and golden-brown and crispy on the edges) with tahini dip. Best meal on earth.

 

Pizza made with cauliflower, on the other hand, is a schande.

http://scavonefamilycookbook.blogspot.com/ is my family's online cookbook that we all add to. Most of the dishes are Italian but not all of them. They are ALL yummy! 

I also love to make homemade pizza. We always use a french bread dough, tomato sauce from Aldi and fresh mozzarella. SO GOOD!

Also my mom came up with something she calls ruben loaf. It also starts with french bread dough but you roll it into a rectangle and add corned beef, swiss or provolone cheese, thousand island dressing and sauerkraut then roll it up and bake it.
