Also a chef's knife is basically the worst stabbing knife you could possibly pick.
Actually not [i]the[/i] worst. The very worst stabbing knives are probably machetes and cleavers.

BUT, anyone with $30 can get a better stabbing knife than that one.

I'm a knife fan. I'm working on a small collection of my own.
Not necessarily stabbing knives, but knives in general. Especially good folders.
This is my current favourite that I own:

When I watched that video up there for the first time yesterday, I bought a knife during lunch and put it on my keychain. Actually they didn't even card me strangely enough.

I'm a knife aficionado myself. I love sheathed knives in particular. Nothing beats a good ol' seven inch United States Marine Corps knife.

We picked one of those up for our cabin.

The fixed blade that I really want is the ESEE-5.

I hear nothing but good things about the ESEE line. Apparently their warranty and customer service is second to none. Their warranty is essentially unlimited. Straight up replacement, no questions asked.
I don't exactly have $130 to drop on a knife right at the moment, and I also don't really have a reason to, but sometime...

In terms of straight up quality though, it can indeed be matched and exceeded.

Of course. Its steel was known to rust away when exposed to sea water, which as you can imagine for Marines in World War II was not the best side-effect it could have had overall. There are probably better knives, but there will always be better knives. The KA-BAR just has a sentimental and historical value to it.

That is going to be true of every carbon steel blade. Definitely can be an issue if there is a lot of sea water around. Generally manageable in other conditions though. Especially with a good coating.
One other issue with the USMC is that it doesn't have a full-width tang. So it won't stand up to heavy use quite as well as something that does, like the ESEE line.
