That's all we have in our house....whole wheat and sourdough. Even the pancakes are whole wheat and/or sourdough.

I still use a little AP white flour with the whole wheat in some things so it's not so thick, though I was SUPER EXCITED to discover that they now make whole wheat white flour in the brand we use! Does your wife grind her own wheat?

I do know she grinds it. But I do not know in what form she buys it in. There are times when I bite into her bread that it feels like biting some sand. It really hate that. She and the kids don't experience that. Perhaps I bite harder than normal. I do think she started to strain(or something) it to reduce the gritty grains. And I think she purchased to different flour.

I think you're thinking of sifting.

My MIL grinds her own wheat berries. I'm not as high speed as she is, though.
