LilyLou
Wilt them down and add to a Spanish Tortilla along with roasted red and orange peppers, some fried onion, mushrooms and any animal product you like (optional). Season well.
That sounds very yummy.

Maximilianus
Is there anything to do with these that does not involve boiling them in bacon fatty water? I HATE soggy green things or just most cooked veggies in general. But I have collard greens and need to figure out what to do with them...
Feed it to some herbivores, and go make a lasagna with lots of meat, cheese and sauce. eta: of course with gluten free stuffs... Laudate_Dominum
Not sure if this has been mentioned yet, but some people drink green smoothies. I've tried it out a couple times and one time I put a bunch of collard leaves from one of my collard plants in the blender raw (along with other stuff) and the smoothie was actually pretty decent. My dad would get them on occasion, but only the canned peas, because he liked those kind. I find those mushy and gross. I learned to eat frozen peas when I was babysitting. It seemed like one family I babysat had frozen peas every time I was babysitting, and I had to choke them down if I was going to make the kids eat them. I eat frozen and fresh peas now, but still will not eat the canned kind.

The only canned veggies I will keep in the house are tomatoes, corn (on occasion), green chilies (if they even count as a vegetable), and beans like pinto or kidney. (Sometimes I have black olives or artichokes, but that's not generally something I keep stocked in my pantry.) Everything else is fresh or frozen. It's a little more expensive, but some things I am snobbish/finicky enough to pay extra for. It's worth it. lol
Laudate_Dominum
I remember making a sauerkraut type of thing with part of my giant collard plant a year or two ago. Just a suggestion.

For some reason, frozen green beans upset my stomach. But mostly we have fresh or frozen veggies. I am picky enough about my veggies, so I need to make them taste somewhat good if I'm going to force myself to eat them.
