We just carved pumpkins, tonight, and now I am roasting the seeds.

Here are our jack-o-lanterns! Mine, Roamin's and Peanuts. :)

The pumpkin seeds I am currently roasting. :proud: Yummy! Peanut's pumpkin had more seeds than mine and Roamin's put together.

Thanks. All my preggo clothes came from my confirmation sponsor, actually (minus one pair of dress pantaloons and a dress). She just had her 8th baby, which was somewhat unexpected, so it was all new stuff for that baby, and then she gave it to me. :proud: She is taller than me, though, so all the pantaloons are too long, which is really weird to me, since I am usually considered tall!

Sorry, didn't see this until now. If it's still of any use, we got rid of the pumpkin guts, and put them in the oven at 300 for 10 minutes, then for every 1 3/4 cups of seeds I mixed 1 TBSP vegetable oil with 2 tsp of seasoned salt or garlic salt (we ran out of seasoned salt so we mixed them and it is tasty), and put them back in the oven for 30 minutes, stirring every 5-10 minutes so they didn't burn.

that's okay...i found two recipes, one for candied pumpkin seeds and the other for lightly roasted pumpkin seeds (it's a little spicy). :)
