My only suggestion would be to find a recipe that does use a little white flour as it does give it a softer crumb. Oh & use honey, most definitely. The danger of making bread however is that it smells so good when it is cooking, then I always want to eat it hot, covered with butter.... dangerous stuff for the figure! My boss makes (in a breadmaker but willwork by hand) a lovely oat and onionseed bread. We make it white but it would work wholemeal, I'd just let it rise a bit longer. I use the breadmaker for everyday sandwich loaves (for now, won't have it in the US), but do everything else by hand. Except for pizza dough - the breadmaker will do that, too!
