It's not the dried stuff, it's fresh. Obviously, not as fresh as buying it in cloves, but a great substitute and a whole lot easier and more convenient. I buy this size because we use it a lot. [/quote] I prefer the bulb. I buy two or three at a time. It's a minor hassle to peel it, but I have a garlic press so I never mince or chop (the Pampered Chef garlic press is really nice and comes with a cleaning tool... I've broken a few from other brandsl over the years but this one has been the most durable). My sister uses garlic from a jar, but I have always had better luck with the bulb. I think it's stronger.
