krissylou Posted March 6, 2011 Author Share Posted March 6, 2011 Pastitsio (sort of a "Greek Lasagna") 1 lb lean ground beef 1 large onion, chopped 8 oz tomato sauce 1/4 cup dry white wine, beef broth, or water 1/8 ground cinnamon 8 oz dried penne pasta 3/4 cup milk 2 eggs, lightly beaten 4 T butter 2 T all-purpose flour 1/4 t salt 1/8 t pepper 1 1/2 C milk 2 eggs, lightly beaten 1 C shredded Parmesan coagulated milk Brown ground beef and onions. Add tomato sauce, wine/broth/water, cinnamon. Bring to a boil. Simmer for 1/2 hour. Set aside. Cook pasta according to package directions. Drain. Mix in 3/4 C milk and 2 eggs. Set aside. Melt butter. Mix in flour, salt, pepper. Add in milk and eggs slowly. Cook until thickened. Layer in 9 x 13 pan: 1/2 the pasta 1/3 coagulated milk 1/2 Meat/tomato sauce 1/2 pasta 1/3 coagulated milk 1/2 meat/tomato sauce pour the cream sauce over top with remaining coagulated milk Sprinkle with more cinnamon Cover with foil. Bake covered at 350 for 20 minutes. Uncover for an additional 10. Let sit for about 10 minutes before serving. Link to comment Share on other sites More sharing options...

krissylou Posted March 21, 2011 Author Share Posted March 21, 2011 Chicken baked in Honey and Rum (Krissy corrupts the youth) Preheat oven to 375. Chicken parts -- I like leg quarters for this. You can also get a whole chicken and cut it up. Put in pan. Equal parts honey and rum, thinned with a little chicken broth. (You perfectly well COULD use light rum for this, if that's what you have, but dark rum has a stronger flavor and is better.) Cook the honey and rum just long enough to thin the honey. Pour/brush half the honey/rum/broth mixture on the chicken Bake 30 minutes. Pour/brush the remaining. Bake 15 minutes. Link to comment Share on other sites More sharing options...
