krissylou Posted January 10, 2011 Share Posted January 10, 2011 Braised Chicken Thighs with root vegetables Eight chicken thighs (without skins but with preferably with bones) couple tablespoons of canola or olive oil 2 C chopped onions 2 C chopped turnips 2 C chopped rutabagas (aka yellow turnips) 1 C sliced parsnips (look like white carrots) 2 C chopped butternut squash. 1/2 cup chicken broth (1 C is okay too, as broth comes in those handy 1C boxes, just reduce it a little longer at the end) Salt, pepper, thyme, sage to taste (All veggies should be chopped into big chunks) (All veggie measurements are approximate. It is MORE than okay to have a bit more of this, a little less of that) In big skillet, brown chicken thighs for about 5 minutes. Remove from pan. Put oil in pan. Saute onions for 3 minutes. Add rest of the vegetables. Saute another 3 minutes. Add chicken back in, on top of the veggies Add rest of the ingredients. Cover. Cook for 20 minutes. Remove lid and cook for another 3 minutes or so until it thickens. Done. Eat. This could be a complete meal as-is. Excellent meal when partnered with bread and a green vegetable or salad. Chopping the veggies takes some time but everything else is EASY EASY EASY. It's great for the fall and winter when root vegetables are cheap cheap cheap.
