I love the theme so I'll give it a go (especially because it sounds like you really need an answer). First of all, [i]"some people say that God is love"[/i] needs to be turned into this: "[b][size="2"]GOD IS LOVE[/size][/b], and he who abides in love abides in God, and God abides in him" (1 John 4:16). A child with Down's Syndrome is clearly a reflection of God (substantially different than any animal) - the Lord fills everyone's cup according to the measure they're able to receive. This fulfilment is brought about by the sharing of love and the meeting of persons (heaven as the joy of seeing and being with Someone) - and we could not know God unless He had made us similar to Him. This, as an event (the "making"), takes place in Creation and in Redemption. Knowledge is therefore a very personal thing - it's about knowing yourself and others. If you do not know, you cannot love but you can love according to the very little you know. But the fundamental reality of love makes it so that noone loses anything according to what they lived or not, only the measure of their response to what they had - God is just. Also, God made and accomplishes the revelation of Himself through people! This should never astound and humble us enough: in our innermost being the nature of God is written; in our new creation in Christ and through our priesthood, we live and communicate the faith through our own bodies and souls. Yet, this is all only a reflection - an image. Some have become, by the grace of God, a more limpid mirror than others but when compared to God (in absolute terms), the scientific genius and the person in a persistent vegetative state are on the same level and dignity. And actually, the more we have, the harder it is to respond to God and we can more easily go astray. (there's wisdom here, watch out...) So basically, it's not about amounts or accomplishments, it's about the fundamental truths of human nature (upon which we base our laws and rights, for instance - they're all really linked to God, and the purifying wisdom of the Church shouldn't be made absent from them, because it knows deeper truths about our nature, which simply means that the Church preserves the real reasons and graces that make it possible to respect the absolute integrity of human life). There you go, 8 centuries or more abridged and reconciled in a few short sentences. Keep on rockin'.
