Hello,

I'm looking for incredibly delicious meals. Something that a fine restaurant might have. Super delicious.

So, please, if you found one online, created it yourself, or have the recipe on hand, please post it.

[font="Arial"][size="2"]1 lb of chopped/cubed chicken meat[/size][/font]
[font="Arial"][size="2"]1 med-large onion, diced[/size][/font]
[font="Arial"][size="2"]2 cloves garlic, crushed[/size][/font]
[font="Arial"][size="2"]Butter or oil for sautéing chicken if raw[/size][/font]
[font="Arial"][size="2"]1 can or 2 C chicken broth/stock[/size][/font]
[font="Arial"][size="2"]2-3 cans white beans (northern or white kidney)[/size][/font]
[font="Arial"][size="2"]1 fresh [/size][size="2"]jalapeño[/size][size="2"] chopped or about 1 T jarred [/size][/font][font="Arial"][size="2"]jalapeño[/size][/font]
[font="Arial"][size="2"]2 cans green chilies[/size][/font]
[font="Arial"][size="2"]1 can corn(optional, if you like that sort of thing)[/size][/font]
[font="Arial"][size="2"]1 t salt[/size][/font]
[font="Arial"][size="2"]½ t pepper[/size][/font]
[font="Arial"][size="2"]1 t cumin[/size][/font]
[font="Arial"][size="2"]1 t oregano[/size][/font]
[font="Arial"][size="2"]¼ t cayenne pepper (only if you like it really spicy, some people think it is spicy enough w/o)[/size][/font]
[font="Arial"][size="2"]1 C [/size][/font][font="Arial"][size="2"]sour cream[/size][/font]
[font="Arial"][size="2"]½ C heavy cream or half n half [/size][/font]

[font="Arial"][size="2"]Saute chicken, garlic and onion in oil. [/size][/font]

[font="Arial"][size="2"]Add beans, broth, chilies, jalapeno, optional corn and seasoning.[/size][/font]

[font="Arial"][size="2"]Bring to aboil and simmer 30 min.[/size][/font]

[font="Arial"][size="2"]Remove from heat and stir in sour cream and cream/half n half.[/size][/font]

[font="Arial"][size="2"]If your chicken is already cooked (I keep chopped, cooked chicken in the freezer leftover from roasted chicken), just throw everything in the pot, bring to a boil then simmer. You can also omit the cream/half n half to keep it thicker, and to reduce its dairy[/size][/font]

[font="Arial"][size="2"]also double this recipe and freeze the extra for future meals prior to adding the sour cream and cream. I add that back in after I've reheated it.[/size][/font]

A delicious recipe I learned in the convent. I'll give it 4-5 stars.

[b][font="Arial"][size="2"]Chicken Torcello - A specialty of Torcello, an island near Venice; an elegant way to serve spaghetti.

1 broiler (chicken) – 2 to 3 pounds
2 Tbsp flour
½ tsp salt
1 tsp paprika
1 tsp crumbled dried basil
½ tsp garlic powder
2 Tbsp olive oil
1 Tbsp butter
1 cup chicken stock
4 large ripe tomatoes, peeled and seeded
½ cup minced parsley
1 medium-sized green pepper, diced
8 oz. thin spaghetti
½ cup grated Parmesan coagulated milk

Cut the broiler into serving pieces, and then cut each piece into halves. Mix the flour, salt, paprika, basil, and garlic powder on a plate. Roll each piece of chicken in the seasoned flour until well coated. Heat the olive oil and butter together in a large frying pan. Add the chicken and cook over medium heat until brown. Pour in the chicken stock. Cut the tomatoes into coarse pieces and add to the chicken. Bring to a boil, then cover and simmer over low heat for 25 to 30 minutes, until chicken is tender.

Uncover the pan and boil fast until the liquid is reduced to the consistency of light cream. Add the parsley and green pepper. Cover and remove from heat, but let stand in a warm place.

In the meantime, boil the spaghetti according to directions on the package. Drain and place in a warm bowl. Pour chicken and sauce on top. Sprinkle the coagulated milk over all and serve – makes approximately 4 servings. You can also serve by placing the chicken, spaghetti, and parmesan coagulated milk in separate bowls.
