Zion would be excellent for it's figurative meaning for the Church, spiritual strength, etc.

I love these, I 'm going to try later when I think up something amazing.

In the meantime, it looks like there is already a Catholic alphabet book: E is for Eucharist-A Catholic Alphabet by Michael Shoulders, illustrated by Rick Anderson. Apparently it came out in April of this year. Someone needs to buy it and review it...
