From the NAB commentary:

Taking a brief look around, there seems to be no consensus. One commentary suggests it may be Cyprus, but that is probably based more on how common Cyprus is in the Old Testament. From what I can gather, "gphr" is just a transliteration of the Hebrew characters, which would imply that it is not a reference to the animal [i]gopher[/i], but coincidentally shares a similar pronunciation.

This is from my forestry background, not theology. The term isn't about a species of wood, but rather a type of wood product, in this case way of laminating the wood together. This made for stronger wood, that was probably also easier to work.
