CatherineM Posted November 17, 2009 Share Posted November 17, 2009 Frozen fish fillets (not the breaded kind), throw in a skillet, medium heat, and cover with favorite salsa and lid. 10-15 minutes and you can have Baja tacos, so very tasty and good for you,. jiyoung Posted November 17, 2009 Share Posted November 17, 2009 I don't actually go by recipes very often--I kind of play it by ear most of the time, and often that's the easiest way to go, because you take what you have and make it work. The trick is figuring out what tastes good together, and using proper spices and stuff. Even just good salt and freshly cracked pepper is helpful. Also learning techniques is helpful...some cookbooks give you ways of cooking things rather than just recipes. There's one that's good for beginners called Anyone Can Cook that's out now, gives you everything from cooking techniques to tips on what kinds of tools and things you need. Piccoli Fiori JMJ Posted November 17, 2009 Share Posted November 17, 2009 We make tostadas at home... we get canned refried beans (we usually use black beans... they taste good!) and use a can of regular beans to add some tasty texture. To start things off, we saute some onion and a little itty bitty can of chopped green chilies for a little while, then add the regular beans. After that is warm, we mash the regular beans up a little, and then add the refried beans to the mix. Heat it all up, then put it on some tostada shells. coagulated milk (Mozzarella is the best), lettuce, tomato, etc. Quite delicious and done in less than a half hour! Let me see... what else is there? If you are looking for something Italian, we make chicken and polenta. My grandma roasted the chicken in a baking dish, but we just cook the chicken in a pan first. After the chicken is thoroughly cooked, we start the sauce with a can of crushed tomatoes, garlic, onion, and one of those spices... um... sage, I think. Cook that up, add the chicken. The polenta takes a little longer. We just boil whatever amount of water with adequate amounts of butter. Then in a separate container, mix some water with corn meal so it is not lumpy but a smooth mixture. After it is entirely mixed, you slowly add it to the boiling water while stirring to avoid lumps. You can look up any recipe for polenta online. It's pretty easy. Ummm... we go to book sales at libraries and my mom buys lots of cook books. We have lots of fun recipes just from those. StColette Posted November 17, 2009 Share Posted November 17, 2009 Umm steamed rice and veggies. 1 yellow squash, 1 zucchini, button mushrooms, & carrots. The veggies will run you around $5.00 total and a bag of rice goes a looooong way! Steam or sautee veggies in light butter sauce add whatever seasonings you want, cook the rice. Mix it all together. It's yummie, though I usually give my squash and zucchini to Micah lol. You can also do kabobs. 1 Yellow squash, 1 zucchini, some mushrooms, a cheap steak (we got a small new york strip for 2.80 so just buy what is on sale). One steak and those veggies managed to make about 5 kabobs. Serve with rice or couscous, flavor either how you see fit or buy flavored versions. Homemade tomato sauce - 1 can of diced tomatoes, 2 garlic cloves, 1 tbsp of basil heat on med-low until bubbly.
