I shall go first: [b]Groo's Banana-Nut Bread[/b] 3 cups flour (whole wheat makes the bread a little firmer and a lot healthier) 2 cups sugar (if ya wanna use brown suger, cut to 1 1/4 cups) 1 t. baking soda 1 t. kosher salt 1 cup chopped nuts (walnuts or pecans are best) 3 t, ground cinnamon 1/2 cup shredded coconut (optional) 4 eggs, beaten 1 1/2 cups applesauce (get the kind with no added sugar) 5 really ripe bananas (the mushier the better - yum) Preheat overn to 325. Mix all dry ingredients togther in a large bowl. Scoop a hole into the center of the pile. Add the rest of the ingredients. Mix thoroughly by hand. (If you must use an electric beater, mix just until everything is moist and the bananas are mooshed up. Too much mechanical mixing causes cracks on the loaf tops.) Fill 3 loaf pans about 1/2 full. Sojourner Posted May 27, 2007 Share Posted May 27, 2007 Chicken Velvet Soup 6 tb Butter 1/2 c Milk 3 c Chicken broth 1 ds Pepper 6 tb Flour 1/2 c Light cream 1 c Fine chopped cooked chicken Melt butter in saucepan, then blend in flour. Add milk, light cream, and broth. Cook over medium heat, stirring constantly, until mixture thickens and boils. Reduce heat, add chicken and pepper. Return to boiling, serve immediately. Totus Tuus Posted May 27, 2007 Share Posted May 27, 2007 Oooh I have a rockin' recipe for Lithuanian coffee bread: Lithuanian Coffee Bread 3/4 cup milk 1 1/2 tsp. vanilla 2/3 tsp. salt 1 1/2 tsp. grated lemon peel (it comes in a jar ) 5 tbl. butter 3 eggs + 1 egg yolk 4 cups bread flour (all purpose works, too.) 2/3 cup sugar 2 1/2 tsp. active dry yeast (1 packet) There is also filling- about 6 tbl. sugar, a couple handfuls of raisins, and an equal amount of walnuts (you can used chopped walnuts, but it doesn't really matter) Run the machine through the dough cycle. Remove the dough onto a floured board and divide it into 6 equal parts. stretch or roll each part into rectangles, put 1/6 of the filling along the middle, and fold over length-wise, pinching the edges closed. The 6 parts make 2 loaves of bread because you braid three parts to make one loaf. Generally my loaves are slightly too large for a loaf pan, so I use a cookie sheet with parchment paper. Let the loaves rise for about 30 minutes. Brush the tops of the loaves with a beaten egg, and bake in a preheated 380 degree oven for about 25 minutes. With your oven, you may want to cover the bread with tin foil the first 10 minutes of baking to prevent the bread from browning too much. Just experiment to find out what works for you. I have adjusted the recipe in numerous places because the one in the book didn't work that well for me. I gave you my version- after having made about 12 loaves, it seems to be the perfect way to do it. I tweaked the recipe and typed it up several years ago, so it may not sound coherent. [b]Pork Chili[/b] 1 1/2 lbs pork, ground or cubed (whichever is easiest for you to get a hold of--a lot of places don't carry ground pork) 1 tbs. vegetable oil 1 onion, chopped 2 cloves garlic, minced 1 can EACH kidney beans, black beans, pinto beans (if you aren't big on beans you can use only one can of one of the types, but I am an over achiever and use all three, the original recipe calls for only one can) 1 can corn (this isn't in the original recipe but I like to add it, its goooood) 1 can chunky/diced tomatoes 1 can diced green chilies 1 tsp ground cumin Salt and pepper to taste In Large skillet brown meat in oil. Add onion and garlic; cook until onion is tender. Season with salt and pepper. Add remaining ingredients. Simmer 10 minutes, stirring occasionally. I usually serve with grated sharp cheddar coagulated milk, but if you prefer other toppings or sides they will work just as well. I also serve this chili with corn bread (recipe below ). [b]Sweet Corn Bread[/b] Combine in a large bowl: 1 c. flour 1 c. corn meal 1/4 c. sugar 2 tsp. baking powder 1/2 tsp salt Mix in a smaller bowl: 1 egg 8 oz. sour cream 1/3 c. milk 1/4 c. soft butter honey (as much as you want, a couple tsp.-tbs. or more, I usually use anywhere from 1/4-1/2 cup, I never measure, but I haven't noticed a smaller amount making it any less tasty, its equally good no matter how much honey you use) Gradually add the wet ingredients to the flour mixture. Pour into a greased baking pan (8x8 square works well for a single batch, but if you have a bunch of kids you may want to double it--at my mom's house we always double it). MIKolbe Posted May 28, 2007 Share Posted May 28, 2007 Taco Seasoning Mix 1 tbs chili powder 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp cayenne 1/4 tsp dried oregano 1/2 tsp paprika 2 tsp ground cumin (or to taste) 1 tsp course salt small pinch nutmeg (optional) I use a little less cumin... but use to taste...if you like mole, add the nutmeg, if not, don't. add to any meat for tacos, so very tasty and good for you, before you cook it... INGREDIENTS: • 20 pitted Kalamata olives, coarsely chopped • 1 Tbsp rinsed, drained, and chopped capers • 1 tsp fresh lemon juice • 2 tsp olive oil • 1/2 tsp anchovy paste (optional) • Fresh cracked black pepper PREPARATION: Combine Kalamata olives, capers, lemon juice, olive oil, anchovy paste, and pepper. Mix well. Refrigerate and use within two weeks. You can use it on a sandwich, but it is tastier on toasted bread. I don't really have a recipe (made it up myself) so here are the approximations: Two chicken breasts (boneless skinless) Fresh spinach Walnuts Feta coagulated milk olive oil cranberries Puff pastry (this is usually in the freezer section of the grocery by pie crusts) Preheat oven to 350 F. Slice chicken breasts in half transversely (like you would slice a bagel), then tenderize them (I sometimes use a hammer, although a tenderizing hammer is best). In a food process, combine 1 c. spinach, a handful of feta, a few dollops of olive oil, and some cranberries. Process until it resembles a pesto, then put a spoonful on half of each of the four pieces of chicken you prepared earlier. Fold breast over filling, then encase the entire thing in puff pastry and seal around the edges. Step #1= Simmer on Medium heat and whisk till melted and smooth: 2 cups heavy cream 6 oz dark or semi-sweet chocolate chips 4-6 Tablespoons baking cocoa powder (preferably dark chocolate if you can find it) Step #2= whisk to blend: 6 large egg yolks 3 tablespoons sugar Step #3= Whisk hot mixture into cold. Pour into cups. (Mugs or small souffle dishes, something comparable in size that is oven safe) Place cups in baking pan (cake pan) and fill to about halfway with water. Bake 325 for 25 minutes. Chill 2 hours. This stuff is AMAZING. I was going to supply a second version, but on comparing the two they are practically identical (my sister in law got this recipe online, so I think that whoever put it online must have gotten the recipe from the cookbook I have, the only difference really is the wording in a few places). Let me know if you want the chicken recipe--its for roasting a whole chicken and you have the option of soaking in in a brine solution first so it retains juiciness, it would take more planning and preparation most likely... but since its your time, your money, and your date its up to you. lol Terra Firma's recipe sounds really good. (I have another recipe for stuffed chicken breasts, too, actually, it calls for mozzarella, tomato, and fresh basil leaves.... that one is really good, too... just let me know if you want it... anyone, if they want it let me know. ) Link to comment Share on other sites More sharing options...
JesusIPray Posted May 29, 2007 Share Posted May 29, 2007 Cloud 9 Delight: Items needed: 8oz container of cream coagulated milk. 15oz can of crushed pineapple. (Drain before you add) Strawberries. Maraschino cherries. Cool Whip 2 packages of instant Vanilla pudding. 1 Angel cake Shredded coconut. Put both packages of the instant Vanilla pudding in a bowl. Add 2 cups of milk to the pudding. Mix with an electric mixer for two minutes. Then add the 8oz container of cream coagulated milk to the pudding and mix until well blended, and there are no chunks. Then add the 15oz can of crushed pineapples to the pudding and fold in with a spoon. Cut the Angel cake into one-inch pieces, and place 1/3 of the cake on the bottom of a bowl. Put 1/3 of the pudding mixture on top of the Angel cake and spread. Put 1/3 of the Cool Whip on top of the pudding and spread. Put the shredded coconut on top of the Cool Whip. Scatter 10 strawberries on top of the coconut. Then place one cherry in the middle. After this, repeat two more times. You should have three layers. Tindomiel Posted May 29, 2007 Share Posted May 29, 2007 POTATO PANCAKES 6 potatoes 1 small onion 2 tsp. salt 3 eggs 1/4 cup flour 1/2 tsp pepper 2 tbsp cooking oil nutmeg to taste Grate the potatoes into a bowl. Chop the onion very finely (or add onion powder to taste), and add that and the other ingredients. Bake like other pancakes on hot greased skillet. Spread a little and bake until golden brown.
